YALMAR
For the YALMAR, wine was the echo of a crossing: light, saline, always in motion. They favoured wines that flowed without effort, with live acidity and aromas of fresh fruit, sea breeze and volcanic stone. Bright whites, nimble reds and fine bubbles accompanied their gatherings by the sea.
OUZALIM
Among the OUZALIM, wine held an almost ceremonial place. They were drawn to wines with character, wines that reveal themselves layer by layer, like stories told over the embers. Deep reds, textured whites, full rosés — all of them spiced, ripe-fruited, with echoes of dried herbs. They never drank in a hurry; they let the wine speak slowly.
VALMYRA
The VALMYRA saw wine as an act of precision and balance. They chose bottles that spoke clearly of their place, without artifice or excess. Taut, transparent whites, fine reds with elegant structure, and a few singular wines that arrive like measured gestures. Every glass had to accompany without imposing — to converse with the plate and the table.
